Go For Broke Chili

Ingredients
  

  • 2 lbs ground beef chuck
  • 1 lb chorizo
  • 1 lb bacon
  • 2 (15 ounce) cans black beans, drained
  • 2 (15 ounce) can chili beans in spicy sauce
  • 2 (28 ounce) cans diced tomatoes with juice
  • 1 (6 ounce) can tomato paste
  • 1 large yellow onion, chopped
  • 3 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 green chiles, seeded and chopped
  • 1 habanero, seeded and chopped
  • 4 cubes beef bouillon
  • 1 cup dark beer (Riverwest Stein does nicely)
  • 4 shots Jack Daniels whiskey
  • 1/4 cup hot Mexican chili powder
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon minced garlic
  • 1 Tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons hot sauce
  • 1 Tablespoon cocoa
  • 2 Tablespoons creamy peanut butter
  • 1 teaspoon dried basil
  • 1 teaspoon salt (or more to taste)
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar

Optional Toppings

  • shredded cheddar cheese
  • sour cream
  • jalapeƱo slices

Instructions
 

  • In separate pans, brown the ground chuck, chorizo and cook the bacon. Drain off extra grease and place into large stock pot.
  • Dump in all other ingredients. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  • Season with additional salt, pepper or chili powder, if necessary. The longer the chili simmers, the better it will taste. Remove from the heat and serve, or cool, refrigerate, and reheat the next day
  • Ladle into bowls and top with cheddar cheese and sour cream
